Muffins with spinach, mushrooms and pumpkin seeds. Two recipes

I have a bit of a gem to share with you this afternoon. A recipe for these pumpkin seeds and spinach-flecked pumpkin feta muffins. Savory muffin fans, you know who you are, these don’t disappoint.

Those are lean muffins and perfect for breakfast or snack. They are quick to make just 30 minutes, so why not invite some friends over and enjoy them together? Who doesn’t love a muffin?

Ingredients:

  • 1 cup rye flour integrally
  • 1/2 cup spelt flour integral
  • 2/3 cup barley flour integrally
  • 1 pastry
  • 1 cup chopped spinach
  • 1/4 cup pumpkin seeds
  • 1/2 cup chopped fresh mushrooms
  • 1 teaspoon turmeric
  • 1/2 teaspoon salt or taste
  • 1 and 1/2 cup mineral water
  • 2/3 cup olive oil

Total time for preparation: 30min
Serving: 4

How to make:

Active the oven to 180-200C

In one bowel add the rye flour integrally, spelt flour integral, barley flour integrally, 1 pastry, 1 teaspoon turmeric and salt for taste.

Add the olive oil and mineral water. With spoon stir and get the mixture.

In the molds of muffins add a little drop of oil and salt with flour.

Recipe Two: Juicy muffins with spinach
To make them you just need 30 minutes. Make this brilliant free recipe for yourself, your family and friends. You won’t believe how easily and quickly you can have spinach muffins on the table just using this recipe.

Total time: 30min
Serving: 3-4 persons

Ingredients:

  • 500g frozen spinach
  • 2 eggs
  • 60ml olive oil
  • 250ml milk
  • 260g flour
  • 2 teaspoons baking powder
  • 150g cheese
  • taste of salt, pepper, nutmeg

Instructions:
First, Active the oven to 200C

Brush the forms for muffins with oil and then flour.
Defrost spinach and drain it well of excess water, then crumble the cheese.
In a big bowl add the eggs, oil and milk. After adding with wire stirring stir well.
Put the spinach, salt, pepper and put a little grated nutmeg.
Twice add the flour previously mixed with baking powder. Nice mix with a wooden spoon. Finally add the cheese and stir the mixture.
Charge forms for muffins and bake for 15-20 minutes.
Leave to cool slightly and serve with yogurt.
From this amount of ingredients you get 12 medium sized muffins. Enjoy!
